It Bromate Really Necessary?
Potassium bromate is so widely accepted as a carcinogen that it has been banned in Europe. A lot of flour sold in America has been treated with potassium bromate. It fluffs up the flour and allows otherwise pour quality flour t o be used in baked goods. It also allows the dough to rise quicker reducing the time it takes to cook reducing cost. Most of the potassium bromate is cooked off but new studies show trace amount are still found in baked goods.
